Recipe: Chai Tea

This is a really delicious drink to share with friends. This recipe makes a nice big batch, so you can always keep it in the fridge for a day or two to warm up when you need it. I often add this chai tea milk to my porridge in the morning for a slightly, spiced, creamy breakfast.

Ingredients 

1 carton of non-dairy milk (soya, oat or coconut)

2 (decaf) tea bags 

3 tbsp maple syrup

Spice mix: 

1 tsp black pepper 

1 tsp cardamom pods

1 cinnamon stick

4 cloves 

1 tsp ginger powder 

pinch of salt 

1 vanilla pod

1 star anise 

Method

This works best when you add all the ingredients to a cold pan and leave the spices to marinade into the milk for an hour or so before you’re ready to heat and drink. Just take the teabags out after 5 mins or it will stew!

When you are ready to drink your tea bring everything in the pan to a low simmer. Non-dairy milk doesn’t do well at high temperatures so you only want the chai tea to get to a temperature of about 65 degrees. Keep stirring to stop it from sticking.
